12 ripe figs | 4 spoons of honey with rosemary | A sprig of rosemary | Grated Parmesan cheese
1. Wash the figs under running water and dry them gently with a cloth or kitchen paper. On a work surface, using a paring knife, make a cross cut on the tops in order to open them, slightly but completely, up to just above
the base.
2. Transfer the figs to a baking tray lined with parchment paper and drain the honey in the center of the cut. Sprinkle with the rosemary needles and the grated Parmesan and cook au gratin at 180 ° C for 15 minutes. Remove from the oven and let cool. You can accompany it at will with ricotta or mascarpone.
