Peperonata

Difficulty Low – Ready i n 40 min.
Serves 4
An aubergine | 3 peppers (one red, one green and one yellow) 3 courgettes | A large onion | 3 potatoes | 300 g of peeled tomatoes | Homemade bread | Extra virgin olive oil | Salt and pepper


1. Peel the potatoes and the aubergine and cut them into large pieces. We do the same thing with the other vegetables.

2. We heat 8 tablespoons of oil in a large pan, then add the chopped vegetables and the peeled tomatoes. Season with salt and pepper and cook over moderate heat for 30-35 minutes.

3. We distribute the peppers on the plates and serve them with slices of toasted homemade bread.
