Difficulty Low – Ready in 60 min. + rest

125 g of egg noodles | 30 g of butter | 50 g of mozzarella | 30 g of cooked ham in a slice | 30 g of grated Parmesan | 3 eggs | Flour | Breadcrumbs | Salt | Peanut oil for frying
1. We cut the ham into cubes and slice the mozzarella. We boil the tagliolini al dente in boiling salted water and season them with parmesan and butter. Let it cool down and chop roughly.
2. Beat the eggs with a pinch of salt, add the noodles and leave to rest for about an hour. We divide the tagliolini into 8 portions, on a floured work surface, and distribute a little ham and mozzarella on each portion (see photo).
3. With moistened hands, we wrap the filling in the dough and form croquettes: pass them in flour, beaten eggs and breadcrumbs. We keep in the fridge for about 30 minutes, then fry in abundant hot oil, drain them on absorbent paper and serve.
