Ingredients for 15 focaccias
150 g of flour 0 | Half a packet of yeast for savory pies A glass of milk | A large egg | Extra virgin olive oil to taste | 45 prawns | A glass of white wine A bay leaf | Black peppercorns and salt to taste | Two cups of mayonnaise A cup of rubra sauce | 15 stems of chives
What we need: bowl, pot, pan
1. In a bowl, sift the flour with the baking powder and half a teaspoon of salt. We combine the egg and milk, working well to obtain a smooth and lump-free mixture. Let it rest for about twenty minutes.
2. In the meantime, bring two glasses of water to a boil with the wine, pepper, bay leaf and salt. Let’s put the prawns in and cook them for a couple of minutes. Drain them, let them cool and shell them.
3. We mix the rubra sauce with the mayonnaise. We chop 2/3 of the prawns, leaving aside the fifteen most beautiful ones to decorate, and mix them with the mayonnaise and rubra sauce. We put a non-stick pan on the fire and brush it with a spoonful of oil. When the oil is hot, add the focaccia mixture, one spoon at a time, forming small discs.
4. Let it cook for a minute and then turn it over to cook the other side. We continue until we use all the mixture. We put a spoonful of prawns with sauce on the focacette, decorate with the prawns left aside and chopped chives.
