Ingredients for 4 people
For the pasta: 500 g of flour | 5 eggs
For the stuffing: 1Kg floury potatoes | 1 fresh sausage | A clove of garlic | Parsley |1spoonful of tomato paste | Nutmeg | Grated cheese | Butter | Sage leaves | Salt and pepperWe knead the flour with the eggs and a pinch of salt. Let’s make rest the dough for about an hour and then roll it out with the pasta machine, dividing it into several parts.In the meantime, boil the potatoes and then mash them with the potato masher. In a pan, briefly brown the finely crumbled sausage to make it crispy.
1. We combine the sausage with the mashed potatoes. We also add the minced garlic and parsley. Season with salt and pepper and add the nutmeg and tomato paste.
2. We knead well and then form balls of filling with our hands. Place them on the sheet, slightly apart. We close with a second sheet and seal the edges.
3. With a cutter wheel, we make our tortelli. We close the four sides with the prongs of a fork and cook the pasta in a pan with boiling salted water.
4. In a pan, melt the butter and add the sage leaves. When the tortelli are cooked, drain them and sauté them in a pan. We complete with a sprinkling of grated parmesan.
